I know the fact that there’s no picture doesn’t look too promising, but I promise you they taste very nice.
I had a picture but it didn’t have a very good quality.
330 grams sweet potatoes
3 tbsp flour
3 spring onions, white and green parts
1 tsp salt
2 tbsp brown cane sugar
Peel the sweet potatoes and cut them into cubes of about 1cm by 1cm. Slowly boil them in a small amount of water, and let them cook until they’re cooked properly. Clean the onions and beat the egg meanwhile. Chop the onions real small and put them in a bowl together with the egg, flour, salt and sugar. Stir this until properly mixed.
Mash the potatoes when they are done and add this to the mixture. Stir well and heat a large layer of oil in a big pan. The layer should be 0,5 cm at least. Once it’s hot take two spoons. With one, you should get some of the potato mixture from the bowl and you should use the other spoon to get the mixture off. It’s quite sticky so you really need TWO spoons. Fry the balls until they have a golden / brown color on both sides. Serve them while they are still warm.
This tastes great with chili sauce.
