Tiramisu icing



330g mascarpone

2 eggs

165g sugar

A couple of drops of vanilla essence

15 ml amaretto

15 ml kahlúa

Cocoa powder



Seperate the egg whites from the egg yolks. Beat the egg whites to stiff peaks.

Mix the egg yolks with the sugar and vanilla essence. Mix for about 10 minutes until the sugar is more or less dissolved. Add the mascarpone, egg whites, kahlúa and amaretto and fold (DO NOT STIR) the mixture. Add some cocoa powder and put it in the fridge for a couple of hours before using it.
