Another delicious recipe. This will make about 12 cupcakes.
150g brown sugar
150g self-rising flour
4g vanilla sugar (or 4 grams of white sugar and some drops of vanilla extract)
2 tbsp milk
25g of dark chocolate
For the banana buttercream:
1 Mashed banana
1/2 teaspoon lemon juice
1/2 teaspoon vanilla extract
425g powdered sugar
10g dark chocolate
Food coloring (optional)
Put your chocolate in the freezer. It should be inside for about 10 minutes. Preheat the oven to 200 degrees Celsius. (392 Fahrenheit). Chop the pecans and mash one banana while the oven is heating. Now get your chocolate and grate it. You’ll see that it is a lot easier to grate chocolate when it has been in the freezer for a little while.
Get a bowl and add the butter, sugar and vanilla extract (if you don’t have any vanilla sugar). Mix it until the butter is soft. Once it is a smooth mixture, add the milk and eggs. Mix again until it’s smooth. Add the self-rising flour and mix again. After you have mixed for some minutes, you can add the banana, chocolate and pecans. Mix until it’s a smooth batter for the last time.
Get a cupcake tin and fill it with cupcake liners. Fill the tin with your batter and bake for about 20 minutes. It may take a bit longer, it depends on your oven. Do NOT open the oven until the 20 minutes are over or until they look like they’re done. This sudden temperature change will cause them to lose their nice shape.
Once they’re done you should get them out of the cupcake tin and let them cool. If you leave them in the tin they’ll get wet.
You can start making the buttercream while they are cooling down.
Mash one banana and add it to a bowl with the butter, lemon juice, vanilla extract and food coloring of you want it. Once the butter is soft, you can start adding the powdered sugar bit by bit. Mix again for the last time.
When the cupcakes have completely cooled down, you can decorate your cupcakes with the buttercream. Grate the other chocolate if you haven’t done it already and decorate the cupcakes with a little bit of chocolate on top.
